  • 4 slices Applewood Double Smoked Bacon
  • 2 slices good quality bread
  • 3 tbsp. mayonnaise
  • 3-4 pieces bibb lettuce
  • 2-3 slices fresh ripe tomatoes
  • pinch maldon sea salt
  • 4 pepperjack cheese slices
  • 1 large egg

Heat oven to 400 degrees, and place Applewood Double Smoked BaconĀ on a piece of parchment on a baking pan, and bake in the oven until crispy and done. While bacon is cooking, spread mayonnaise on 1 piece of bread. On top of mayonnaise, place the lettuce, and then the tomato, and then sprinkle the tomatoes with a little bit of the sea salt. Once bacon is done cooking, place on top of the tomatoes, with the meat edge of 1 piece of bacon, just overlapping the fat edge of the other piece of bacon. Place cheese on other slice of bread and place in oven or under the broiler. Just to melt the cheese. While cheese is melting, fry the egg over easy and place on top of bacon. Place bread with melted cheese on top, cut sandwich in half and let the egg yolk run all down the sandwich. Eat and enjoy.
