  • Super Trimmed Filet Mignon with Bacon
  • 1/4 cup light soy sauce
  • 1 tbsp. dark soy sauce
  • 1 cup bourbon
  • 3 cloves garlic, lightly crushed
  • 2 tbsp. olive oil
  • 2 tsp. Jalapeno Tabasco Sauce
  • 1/2 tsp. sea salt
  • 1/2 tsp. white pepper
  • 1 tsp. cracked green peppercorns

In a large glass bowl combine soy sauces, bourbon, garlic, olive oil, Tabasco Sauce, salt, and pepper. In a spice grinder or mortar coarsely grind green peppercorns, add to mixture. With fork tines poke steaks to infuse the juices. Add 6oz Filet Mignons to the mixture, refrigerate overnight. Turn over to marinate evenly. The next day remove steaks. Save marinade. Set up grill. Grill 6oz Filet Mignons over medium-high heat 6 minutes each side until desired doneness. Use marinade as baste.
