  •   Super Trimmed Filet Mignon with Bacon
  • 1/4 cup light soy sauce
  • 1 tbsp. dark soy sauce
  • 1 cup bourbon
  • 3 cloves garlic, lightly crushed
  • 2 tbsp. olive oil
  • 2 tsp. Jalapeno Tabasco Sauce
  • 1/2 tsp. sea salt
  • 1/2 tsp. white pepper
  • 1 tsp. cracked green peppercorns

In a large glass bowl combine soy sauces, bourbon, garlic, olive oil, Tabasco Sauce, salt, and pepper. In a spice grinder or mortar coarsely grind green peppercorns, add to mixture. With fork tines poke steaks to infuse the juices. Add 6oz Filet Mignon s to the mixture, refrigerate overnight. Turn over to marinate evenly. The next day remove steaks. Save marinade. Set up grill. Grill 6oz Filet Mignon s over medium-high heat 6 minutes each side until desired doneness. Use marinade as baste.
