  • 4 Applewood Double Smoked Bacon
  • 8 U10 sea scallops

Place bacon on a sheet pan and place in a 375 degree oven. You want to par cook the bacon so that it is still flexible and has not taken on any color. Remove from oven and let cool. While bacon is in the oven. Dry scallops really well, and season with salt and pepper. Cut bacon in half and wrap a half piece around each scallop. Secure with a toothpick if necessary. Place a sauté pan on the stove over medium high heat for 4 minutes. Add 1-2 tablespoons of oil, coat the bottom of the pan. Add the scallops, and season for about a minute on each side, then flip the scallops on their sides to crisp up and finish cooking the bacon, if necessary. Serve with your favorite steak for a surf and turf meal.
