  • 16 Jumbo Shrimp
  • 1 box of pizza crust mix
  • 3 tsp. olive oil
  • 1 1/2 tsp. salt
  • 3/4 cup fresh cilantro
  • 1/4 cup fresh parsley
  • 2 tbsp. pine nuts
  • 1/4 cup parmesan cheese
  • salt and pepper
  • 2 cups monterey jack cheese, grated

Combine all the ingredients for the pesto in a food processor and set aside. Preheat the grill to a medium high heat. Make your favorite pizza crust mix according to the directions. Once the dough has risen roll the dough into four 8 inch circles. Grill the Jumbo Shrimp for 2-3 minutes per side. Remove from the grill. Hold warm. Brush both sides of the dough with olive oil. Place the dough on the grill. Grill the dough on both sides until golden brown. Remove from grill. Place ½ cup of the cheese on the crusts, followed by the pesto and the shrimp. Top with remaining cheese and place back on the grill. Cover the grill and cook an additional 3 to 5 minutes or until the cheese is nicely melted.
