  • Type of Meat/Cut: Chateaubriand
  • 1/4 cup glace de viande, or 1 tbsp. beef extract
  • 1 tbsp. hot water
  • 1/2 cup butter, softened to room temperature (do not substitute)
  • 2 tbsp. lemon juice
  • 1 heaping tbsp. parsley, minced
  • pinch of nutmeg
  • pinch of cayenne pepper
  • 2 tbsp. dry madeira wine

Heat glace de viande with hot water in a small saucepan. Slowly beat in butter, 1 tablespoon at a time. Mix in the remaining ingredients. Drizzle sparingly over broiled  Chateaubriand .
