Choose our USDA Prime Tenderloin Roast (or Chateaubriand) from our Private Stock® and you will be amazed! The exquisite marbling you see and taste are the calling cards for USDA Prime. And when you choose this Beef Tenderloin, you're choosing a roast that has been carefully selected for its incredible quality and flavor.

    Thaw in refrigerator for at least two days before preparing.

    Rub Chateaubriand with softened butter then sprinkle with Original Steak Seasoning or coarse salt. Place Chateaubriand fat side up on a rack in a shallow roasting pan. Do not add water or cover.

    Roast in 450°F oven until a meat thermometer registers 135°F for medium rare doneness (about 30 to 40 minutes) or 145°F for medium doneness (about 40 to 45 minutes). Beef Tenderloin is best when cooked to medium rare doneness. Well done is not recommended because the meat becomes dry and has less flavor. Allow roast to rest for 10 minutes before slicing.

    Will this work for beef wellington? Why do you offer two 2lb steaks instead of one four pounder?

    This would absolutely work should you want to carve it and create your own Beef Wellingtons. The size of this product is optimal for many uses and serves as a catch all for those who do not want an individually cut Filet Mignon.

    Would this be the best selection of meats for a Beef Wellington?

    Our Beef Wellington is crafted with our USDA Choice Filet Mignon, which is one of our highest selling cuts of steak. Should you be into crafting your own Beef Wellington with a recipe, you could select a different cut of our Filet Mignon, such as Crown, USDA Prime, or even American Style Kobe.
