  • Cooking

    Thaw prime rib roast in refrigerator for at least 3 days before preparing. Place meat, fat side up, on rack in a shallow roasting pan. Season with Original Steak Seasoning (included in your order). Rub evenly over surface of netted roast. Do not add water or cover.

    For express thawing in 7 hours, leave the roast on a counter top at room temperature. Or to thaw in 2 hours, place the roast in 85° warm water while still in its packaging. Be careful not to let the water temperature rise past 85° to ensure best quality and taste. This is best if cooking the same day otherwise thawing on the counter is recommended.

    Roast in 375 degree oven until meat thermometer registers 130 degrees (approximately 1 to 1 ½ hours) for medium-rare or 140 degrees (approximately 1 ½ to 2 hours) for medium. Cover roast with aluminum foil tent and allow to stand 15 to 20 minutes. Remove netting and trim excess fat before carving.

    Cooking instructions are approximate since roast sizes vary. We recommend using a meat thermometer for best results and to ensure proper doneness.

     USDA Preparation Guidelines for Mechanically Tenderized Beef:
     Bake until product reaches 145F as measured by a food thermometer, and  hold the product at or above that temperature for 3 minutes.

I purchased a package of two 4-4.5 prime ribs via an online/tv company that sells Kansas City Steak products anticipating great things for the New Year. Unfortunately we were disappointed by the size and flavor of the meat for we could not get 8-10 servings from it. They were also heavily marbled with fat; I like a little fat with my prime rib but these had pockets of heavy fat marblization that only pleased the dogs! Plus we had to go online to get cooking instructions since our order did not include any directions or the booklet as stated. Don't know if this was just because we went through an indirect retailer but it's Kansas City Steaks so thought it would be okay.

    Rated 2 out of 5 by from Expected Better I purchased the 8030 Prime Rib for New Years Dinner. The roast was more tender than what I get from my local grocer but the flavor was terrible. The injection flavor ruins the roast. I would not try the roast again at any cost.

    Rated 3 out of 5 by from Inconsistent Quality I ordered #8051 - two 5.5-6 lb. prime rib roasts for our annual New Years Day family dinner. They have always been just perfect - until this year. One roast was beautiful - the other had a band of fat about 1 1/4" wide running through the center of the roast. The presentation alone took your appetite away - it looked awful on the platter after it was sliced. The flavor was okay - but I paid a LOT of money for fat rather than meat. For a family of meat eaters this was a BIG disappointment. I'm going to have to rethink this tradition. What an unpleasant way to start the New Year.

    Rated 1 out of 5 by from Very disappointed with this Prime Rib I ordered the 5 - 5.5 pound Prime Rib as I have done many times before...Always been very happy with it...but not this time.....I cooked it to Med Rare using my Meat thermometer...let it rest 30 mins....This Prime Rib was tasteless and tough...no one ate it....how disappointing that was on Christmas Day. I was so embarrassed ....this is the first time I have had this issue...

    Rated 5 out of 5 by from Excellent Roast For the first time I bought a boneless prime rib from Kansas City and it was wonderful. Cooked exactly as the instructions stated and was medium rare. A day later even better. Warmed the slices in au jus and it did not cook anymore just warmed up and had another great dinner. The last of it eaten today as hubby had a french dip sandwich on a kaiser roll. Yum!

It has been hit and miss with this company, but most of the time I can at least count on tenderness. This roast was tough and lacked flavor. Next time I'll go local or the other Steak company.

    Rated 1 out of 5 by from Prime Rib - tough as leather I have been ordering beef for several years online and have been disappointed very rarely - but this prime rib was cooked to a medium rare as was tough no one at our dinner table could even chew it - the comments I got were "It is so tough that it could not be chewed" . What a disappointment for a meal of such importance to our family. I very rarely write reviews but I really was dissatisfied with this order.
