  • 2 lb. fingerling potatoes
  • 3-4 tbsp. olive oil
  • fresh rosemary or thyme
  • 4-5 garlic cloves, minced
  • salt and freshly ground pepper
  • shredded parmesan

Mix all ingredients and place in a baking dish. Cook in a pre-heated oven at 425 degrees F. turning occasionally until crisp on the outside and tender on the inside, about 30 minutes. Sprinkle with shredded parmesan and serve. Alternative cooking method: Boil potatoes in water on stovetop until they are soft when pierced with a fork. Drain the liquid and mix with the other ingredients. Cook in the oven for 15 minutes. Sprinkle with parmesan and serve.
