  • 1 lb. package  Beef Tenderloin Tips
  • 2 cups red wine
  • 1/4 onion, minced
  • 2 cloves garlic, crushed
  • 2 cups beef stock
  • 1 tbsp. canola oil
  • 1/2 cup heavy cream
  • 1/2 cup blue cheese
  • 1 tbsp. horseradish
  • salt and pepper

Details

In a fondue pot, sweat garlic cloves and onion in oil. Add red wine and reduce by half. Add beef stock and heat to a simmer. In a blender add remaining ingredients and puree. Cook  Beef Tenderloin Tips  in red wine, beef stock mixture until desired doneness, about 90 seconds for medium. Dip in the blue cheese cream mixture and serve.
