  • 1 lb. new potatoes, approx 1 ½ inches in diameter cleaned
  • 2 - 3 tbsp. extra virgin olive oil
  • 3 tbsp. chopped parsley
  • 1 1/2 chopped herbs, like rosemary, tarragon, or basil (optional)
  • 1 tbsp. finishing salt, such as Fleur de sel, or Maldon sea salt

Boil the potatoes in at least 1 gallon of salted water until they are almost done. Approximately 15 minutes. Drain. Slice potatoes in half. Toss in a bowl with half the oil until potatoes are lightly coated with oil. Place potatoes cut side down onto a hot grill and grill until golden brown and delicious and cooked through. Toss in a bowl with remaining olive oil, and chopped herbs, until well glazed and coated with herbs. Sprinkle with finishing salt. Serve hot
