Add heavy whipping cream to an 8 inch saucepot on medium-high heat. (Recommend using a saucepot because the cream will boil rapidly.) Bring to a boil, then reduce the heat to medium. Add the gorgonzola cheese, black pepper, and a pinch of all purpose flour once the cream comes to a boil. Stir in all ingredients until all of the cheese has combined with the cream and the sauce is smooth. Continue to cook the sauce until it reduces by half, this takes 5 to 8 minutes. Take off the heat and serve immediately. This sauce will serve 4 to 6. This is a rich and luxurious sauce best used with grilled 6oz Filet Mignon Mignon or Kansas City Strip Steak.
