Rub meat with sea salt and pepper and let stand 5 to 10 minutes. Heat griddle, grill pan, or broiler to high. Charcoal grill recommended. Stir garlic, ginger, soy sauce, Worcestershire Sauce, sherry and divide. Coat meat cuts with half of mixture, place on or under heat. Heat 3 to 4 minutes, flip cuts. Baste with other half of mixture. Heat another 3 to 4 minutes (to desired degree of doneness). remove from heat, let rest. Sprinkle with chopped sweet basil. Serve.
