To prepare your American Wagyu Filet Mignon to perfection, follow these detailed cooking instructions:
Preparation:
Thaw Your American Wagyu Filet: Place the steak in the refrigerator for at least 24 hours to ensure it thaws evenly.
Bring to Room Temperature: Remove the steak from the refrigerator 30 to 40 minutes before cooking to allow it to reach room temperature, promoting even cooking.
Season Your Steaks: Pat your steaks dry with paper towel and apply your preferred seasoning; the Kansas City Steak Original Steak Seasoning is recommended. Remember, season heavily as much of your seasoning will come off during cooking.
Cooking Methods:
1. Grill Your American Wagyu Filet:
Charcoal Grill:
Position the steak over the hottest part of the grill.
Sear each side for 1 to 2 minutes.
Move the steak to medium, ash-covered coals.
Continue grilling to your desired doneness, turning the steak about 1 minute before the halfway point.
Gas Grill:
Preheat the grill on high to 450-550 degrees Fahrenheit.
Sear both sides of the steak for 1 to 2 minutes.
Reduce to medium heat.
Continue grilling to your desired doneness, turning the steak about 1 minute before the halfway point.
2. Pan Sear Your American Wagyu Filet:
Heat on medium-high, a seasoned cast iron skillet or stainless-steel pan with a high smoke point fat such as clarified butter (ghee), Beef Tallow, Grapeseed Oil, or Avocado Oil.
Place the steak in the preheated pan, you should hear vigorous sizzling. If not, remove and increase your heat.
Cook to your desired doneness, turning the steak about 1 minute before the halfway point.
3. Broil Your American Wagyu Filet:
Set the oven to broil and preheat for 10 minutes.
Place the steak on a rack in a broiler pan.
Position the broiler pan so the surface of the steak is 3 to 4 inches from the heat source.
Broil to your desired doneness, turning once.

Rest Your Filets Before Cutting:
After cooking, let the steak rest for 5 to 10 minutes. This allows the juices to redistribute, ensuring a moist and flavorful steak.
