  • Cooking

    Filet Mignon is so tender that it is best enjoyed cooked rare to medium-rare. The longer you cook it, the less tender and drier it will become.

    Use a dry, high heat method such as grilling, roasting, pan-frying, or broiling.

    Cutting into the meat to check doneness lets juice escape. Use the touch method. Touch the meat. If it feels soft and leaves an imprint, it is rare. If it is soft but slightly resilient, it is medium-rare. When it feels firm, it is well done.

    Filet Mignons are a thick steak, so grill the sides as well as the top and bottom.

    Rated 5 out of 5 by from Great Filet! My hubby never wants to have Filet - he says flavor just isn't there. Well- we have tried these with bone in & he loves them!! We always order them now!!

    Rated 1 out of 5 by from More Hype than Substance I didn't detect one iota of additional flavor from having the bone left on. The one steak I've eaten so far was extremely chewy and difficult to cut. Not at all what I've come to expect from KC Steaks Filets. I'm trying another one tonight. The amount of meat on the bone was quite disappointing also. Then there is the unusual cut of a couple of the steaks. They're about 3" of bone with a tiny sliver of meat on it. Almost like a large rib. How could they even send steaks like that to their customers with a straight face? When you factor in the tricky cooking, difficulty of cutting it to eat, and the ridiculous cuts of some of the steaks, these are nowhere near worth the exorbitant price. Sadly, I believe it's just a way for KC Steaks to market a product that was already perfect without the bone, and charge a lot more for it. How is it that leaving the bone in raises the price? Usually you pay less when the butcher doesn't have to labor to remove the bone! I've been a satisfied KC Steaks customer for several years now, but this kind of thing reminds me of that other steak company in Omaha. I feel foolish for believing the hype.
