How to Age Beef?
We've already taken care of this for you so you don't have to worry about this step. We use an aging process referred to as "wet aging". This process allows the meat to naturally age, in a sealed Cryovac package in a climate controlled environment for up to 28 days. The meat marinates in its own juices, and becomes very tender. We believe it's the absolute best way to prepare meat.
