El Carnivoro Sweet Spice Brazilian Wet Rub

Ingredients:
1 vanilla bean, scraped
1 tsp. finely ground coffee
1 tsp. dutched cocoa
1 tsp. chipotle powder
2 tsp. sea salt
1 tsp. crushed mixed peppercorns
2 tbsp. Demerara (or raw) sugar
1/3 cup dark rum
Directions: Mix ingredients thoroughly in 1 cup container. Cover and let flavors ripen for 2 hours. Massage gently into Kansas City Strip Steaks. Let marinade, chill covered overnight. Grill to taste over hardwood charcoal.
