Chipotle Buttered Ribeye Steaks

Ingredients:
For the Rub:
2 Tsp. Ground Cumin
1 Tsp. Paprika
1/2 Tsp. Salt
1/2 Tsp. Ground White Pepper
1 Tbsp. Extra Virgin Olive Oil
1/4 Tsp. Adobe Sauce
For the Chipotle Butter:
1/4 Cup Softened Unsalted Butter
1 Tbsp. Finely Chopped Shallots
2 Tsp. Fresh Basil, snipped
2 Tsp. Fresh Cilantro, snipped
1 1/2 Tsp. Freshly Squeezed Lime Juice
1 Tsp. Finely Chopped Chipotle Peppers (in adobe sauce)
4 18 oz. Cowboy Steaks
4 Fresh Basil & Cilantro Sprigs & 4 lime wedges for garnish
Directions: For the butter; blend the 6 ingredients together and set to the side.

Blend the 6 ingredients for the rub to make a paste and spread with the palms of your hands onto both sides of each ribeye steak.

Let the steaks marinate at room temp. for 10 to 15 minutes. Wrap the rib bones with foil to prevent the bones from getting burned.

On an open grill over red hot to medium hot coals, cook the steaks for approximately 5 minutes on the first side and 4 to 5 minutes on the second side for medium rare.

Start and repeat to brush the steaks with chipotle butter after they are placed on the grill from the beginning til removed from the grill.
