St. Louis Shrimp
- 2 eggs
- 3/4 lb. packaged salad
- 1 lb. Jumbo Shrimp, thaw, cook and drain
- 1 1/4 cup Thousand Island Dressing
- 1/4 cup chives, chopped

Place eggs in a saucepan with water to cover. Bring to a boil over high heat. Reduce heat to medium low and cook 10 minutes. Transfer eggs to a bowl of cold water to cool. Arrange lettuce on serving plates. Spoon dressing over cooked Jumbo Shrimp. Shell and slice egg and arrange around shrimp. Sprinkle with chives.
