Ginger Glazed Carrots
- 2 tbsp. butter
- 3 cups carrots, peeled, oblique cut
- 1/2 cup chicken stock
- 1 tbsp. fresh ginger, grated
- salt and black pepper to taste

Heat sauté pan and melt the butter. Add the carrots, chicken stock, ginger, and seasoning. Bring to simmer and cook, covered on low heat until carrots are almost done. Remove cover and allow liquid to reduce to glaze. If carrots are done before glaze is formed, remove them with slotted spoon, reduce liquid, and return them to pan to finish process.
