Padre Island Steak

1 tbsp. chili powder
1 tbsp. hungarian paprika
1/2 tp. ground cumin
1/2 tsp. onion powder
1/2 tsp. madras curry powder
1/2 tsp. cayenne pepper, ground
1/2 tsp. dry mustard
1/2 tsp. sugar
1/2 tsp. kosher salt
1/2 tsp. freshly ground pepper
2 tbsp. peanut oil
prepared fruit salsa, such as pineapple or mango
Directions: Mix spices together in a small bowl and generously season the filets by rubbing each on both sides with the spice mix. Let stand at room temperature for an hour.

Heat the oil in a large cast iron skillet over high heat. Sear the steaks on both sides, then sauté to desired doneness. Serve immediately with spoonfuls of fruit salsa over the top.
