Grilled Shrimp and Papaya Salad

1 lb. arugula
2 ripe papayas, pitted and sliced
4 green onions, sliced
16 Jumbo Shrimp
1 tbsp. olive oil
salt and pepper, to taste
2 tbsp. fresh lime juice
2 tbsp. fresh lemon juice
1 tbsp. soy sauce
1 jalapeno, minced
2 tbsp. cilantro, chopped
1/2 cup peanuts, chopped
1/4 cup olive oil
Directions: Preheat the grill to medium heat. Brush the Jumbo Shrimp with olive oil and season with salt and pepper. Cook 2 – 3 minutes per side and chill. Whisk together the citrus juice, soy sauce, jalapeno, cilantro, and olive oil until combined. In a large bowl place the arugula, shrimp, peanuts, and vinaigrette. Toss to combine. Place the salad on a plate and garnish with sliced green onions and thin slices of papaya.
