What does aging mean?

What does aging mean?
We use an aging process referred to as "wet aging". This process allows the steaks to naturally age, in a sealed Cryovac package in a climate controlled environment for up to 28 days. The meat marinates in its own juices, and becomes very tender. We believe it's the absolute best way to prepare meat for grilling, broiling, pan frying or oven roasting.
