Dijon Vinaigrette Dressing

2 cups Dijon Mustard
2 1/2 cups olive oil
1/2 cup white wine vinegar
1 pimiento, finely chopped
1/2 green pepper, finely chopped
5 sprigs parsley, finely chopped (optional)
Directions: Put mustard, oil and vinegar in a blender and mix well. Pour mixture into a bowl and add remaining ingredients. Blend well and serve over salad greens.

Yields about 6 cups
