Chief Minister of the King Steak Sauce

1/4 cup glace de viande, or 1 tbsp. beef extract
1 tbsp. hot water
1/2 cup butter, softened to room temperature (do not substitute)
2 tbsp. lemon juice
1 heaping tbsp. parsley, minced
pinch of nutmeg
pinch of cayenne pepper
2 tbsp. dry madeira wine
Directions: Heat glace de viande with hot water in a small saucepan. Slowly beat in butter, 1 tablespoon at a time. Mix in the remaining ingredients. Drizzle sparingly over broiled Chateaubriand.
