What Are Wet Aged Steaks?
You may have heard the term wet aged steak before. A wet aged steak means it has been through the process of aging for up to 28 days after it was first cut. Wet aged beef is vacuum packed and refrigerated for a couple of weeks in order for the steak to absorb its own flavors and in turn, become a more tender cut of meat.
Fine cuts of meat from the loin or the ribs are commonly wet aged. Steaks processed like this simply have a more complex flavor, better texture and often don't require steak knives to cut - they are that tender!
