Vermicelli Salad

Ingredients:
1 lb. Jumbo Shrimp or crabmeat, cooked and rinsed
1/2 cup lemon juice
14 oz. vermicelli
1 medium red onion, chopped
1 medium green pepper, chopped
1 tbsp. parsley, chopped
1 1/2 tsp. celery seed
1/2 tsp. oregano
1/2 tsp. chives, chopped
1/4 cup italian dressing
1 cup mayonnaise
salt and pepper to taste
Directions: Marinate Jumbo Shrimp or crabmeat in lemon juice. Cook vermicelli in boiling water, stirring constantly. Drain and blanch with cold water. Add onion, peppers, parsley, celery seed, oregano, chives and italian dressing. Moisten with mayonnaise, adding more if necessary. Stir in marinated shrimp or crabmeat, and then add salt and pepper to taste.

Serves 8-12
