Preparing Filet Mignon
This cut is so tender that it should never be cooked beyond medium-rare. The longer you cook it, the less tender and drier it becomes.
Use a dry, high heat method such as grilling, roasting, pan-frying, or broiling.
Cutting into the meat to check doneness lets juice escape. Use the touch method. Touch the meat. If it feels soft and leaves an imprint, it is rare. If it is soft but slightly resilient, it is medium-rare. When it feels firm, it is overdone.
Filets are a thick steak, so grill the sides as well as the top and bottom.

Well, we tried your steaks for the first time the other night. I must say they were SUPERB. The filet mignon and the porterhouse. I will be ordering all my steaks from you in the future. Thanks for taking the time to make your steaks special. I've tried other mail order or online beef and steak houses without success. I'm glad I didn't give up. Third time was the charm.

I ordered your Filet Mignons for a Christmas Present for my nephew Matthew who is a big steak eater. He saved them for our New Years Eve dinner, and broiled them on his grill. I have to let you know they were the best steaks we have ever had. There were 5 of us and Matthew grilled all 6 Filets, and there was not one crumb left. The filets were wrapped in the hickory smoked bacon, and the flavor was outstanding. We did not even use our steak knives that night. I will be ordering again in the next few weeks, and just had to let you know that Kansas City Steaks rocks!!!!
