Preparing Prime Rib Roast
Thaw prime rib roast in refrigerator for at least 3 days before preparing. Place meat, fat side up, on rack in a shallow roasting pan. Season with Original Steak Seasoning (included in your order). Rub evenly over surface of netted roast. Do not add water or cover.
For express thawing in 7 hours, leave the roast on a counter top at room temperature. Or to thaw in 2 hours, place the roast in 85° warm water while still in its packaging. Be careful not to let the water temperature rise past 85° to ensure best quality and taste. This is best if cooking the same day otherwise thawing on the counter is recommended.
Roast in 375 degree oven until meat thermometer registers 130 degrees (approximately 1 to 1 ½ hours) for medium-rare or 140 degrees (approximately 1 ½ to 2 hours) for medium. Cover roast with aluminum foil tent and allow to stand 15 to 20 minutes. Remove netting and trim excess fat before carving.
Cooking instructions are approximate since roast sizes vary. We recommend using a meat thermometer for best results and to ensure proper doneness.

from Tough as shoe leather! I bought this as a special night for the wife. It arived on time look just perfect. cooked untill tempature was 130 just like the video states. Carved into the roast and it looked just like the picture. Well I should have saved the money and bought a select rib roast form my local store, in fact I have had better roast then this and they were not aged 28 days. Not worth the money, they should not call this prime rib at all

from Christmas Dinner 2014 I wanted to do a rib roast for my families Christmas dinner this year. After shopping around both locally and online I went with The Kansas City Steak Company. This was my first time ordering from them so I was reserved in my expectations. The roast arrived on time and still frozen. I visually inspected the roast and was kinda worried as it looked a little too brown to me. After the roast was thawed the color came back and I was satisfied. I can only assume that the brown look was because of the flash freezing and lack of oxygen in the cryovak packaging. Cooking the roast was a breeze, as I used the seasoning that was included free in my order. The roast cooked beautifully and tasted magnificent. I would definitly buy again.

from So disapointed! This Prime Rib Roast was such a disapointment to us. I followed the instructions to a tee and the roast came out dry and had hardly any taste. I should have known better to cook any roast at 375 degrees. This is not the way to cook a roast. I certainly was taught better than that. I have cooked Prime Rib from the grocery store at 325 degrees and it turned out much tastier, jucier and more tender than your Prime Rib. We will not be ordering again.

from Disappointed I have purchased this roast before and was completely satisfied with the quality, so I had no hesitation in purchasing another for our family's New Year's dinner. What a disappointment! Although I cooked this roast the same way I cooked the last, it was tough and dry - not moist and juicy like the last one. Don't know what happened with this one, but I won't be ordering another again.

from Prime rib for Christmas I am newly widowed but wanted to host Christmas dinner for my kids, just like my wife did, as long as I could. I can grill a steak or chicken etc. but I wanted something special. Two prime ribs were what I decided on. It is an expensive piece of meat to ruin. But I smoked it in my Weber and it turned out great. My daughters were amazed I had the courage to take it on. The better the cut of meat the less the risk. The only risk was that I left it late to order. It arrived and in time with two days to spare and defrost.

Vietti Nebbiolo Perbacco, Langhe
Serve this “Baby Barolo” with substantial beef and lamb dishes, creamy cheeses and anything with truffles. Its especially great with braises, stews and well-marbled steaks and chops, as the Perbacco’s natural acidity will cleanse the palate between bites of the rich meat. Barolo is also one of the world’s greatest wines to pair with truffles.
One of Nebbiolo’s defining characteristics is its gloriously aromatic bouquet, a quality that's clear in this wine’s fragrant, filigreed aromas of dried cherries, flowers and earth. On the tongue it’s juicy and mouthfilling, with bright acidity, illuminating flavors of roses, cherries and plums. Its tannins are suave and ripe, staying in beautiful balance with its fruit and acidity.
Chateau Rocher Corbin Montagne Saint-Emilion
Lamb and beef in many guises make classic accompaniments to red Bordeaux, though this Merlot-based red’s ripe tannins mean that it will be equally delicious with duck, pork and hearty chicken or turkey dishes. Accents such as fresh herbs, black olives and mushrooms will echo the wine’s savory side.
A rich core of blackberry fruit defines this powerful red. It shows the warmth of the 2009 vintage in its full body, velvety tannins and deep black and red fruit flavors; dusty mineral and clove notes inflect the finish.
Stack House Cabernet Sauvignon
Cabernet’s bold structure demands equally bold flavors on the plate, with plenty of protein and fat to match its tannins and intense fruit. Red meat and game, simply prepared, make an ideal pairing. Try the Stack House Cabernet with juicy steaks, thick-cut chops, roasts and stews of lamb, venison or beef.
Classic Napa Valley Cabernet aromas of blackcurrant, cedar and espresso define this aromatic red. On the palate it’s bold but restrained, with ripe tannins and loads of sweet, dark cassis layers filigreed in notes of clove, vanilla and graphite.
