  • 4 Veal Shanks for Osso Buco
  • Flour as needed
  • 1 Tbsp. olive oil
  • 1 Tbsp. butter
  • 1 1/4 cup finely chopped onions
  • 1/3 cup finely chopped carrots
  • 1/3 cup finely chopped celery
  • 1/2 tsp. dried marjoram
  • 1/2 cup dry white wine
  • 1 can (14 oz.) diced tomatoes
  • Zest from 1 lemon
  • 3/4 cup veal stock or chicken broth
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • Gremolata:
  • 1 Tbsp. minced fresh parsley
  • 1 tsp. lemon zest
  • 2 minced garlic cloves
