Mango Chutney |
Ingredients: 1 cup cider vinegar 1/4 cup lime juice 2 tbsp. honey 1/4 cup mango, peeled, sliced 1/4 cup currants 1/4 cup raisins 1/4 cup red onion, minced 1/2 cup green bell pepper, seeded, ¼ in diced 1/4 cup almonds, silvered 2 tsp. ginger, peeled, minced 2 tsp. mustard seeds, crushed 2 jalapeno pepper, minced

Directions: Combine all ingredients & bring to boil. Reduce to simmer, cook 30 minutes. Drain off liquid, and reduce that liquid by half. Return liquid to the chutney and stir to combine. Cool before serving. |
