Mango Chutney

1 cup cider vinegar
1/4 cup lime juice
2 tbsp. honey
1/4 cup mango, peeled, sliced
1/4 cup currants
1/4 cup raisins
1/4 cup red onion, minced
1/2 cup green bell pepper, seeded, ¼ in diced
1/4 cup almonds, silvered
2 tsp. ginger, peeled, minced
2 tsp. mustard seeds, crushed
2 jalapeno pepper, minced
Directions: Combine all ingredients & bring to boil. Reduce to simmer, cook 30 minutes. Drain off liquid, and reduce that liquid by half. Return liquid to the chutney and stir to combine. Cool before serving.
Servings: 4
