Barbequed Tenderloin

Ingredients:
1 pork tenderloin, 4 1/2 to 5 lbs.
salt
Marinade
3 tbps. soy sauce
freshly ground pepper
3 springs rosemary (or 1 tbps. dry)
2/3 cup fresh orange juice
3 cloves garlic, minced
Directions: Place meat in shallow pan and add marinade ingredients. Turn several times to mix marinade. Cover and refrigerate at least 2 hours, turning meat once or twice during that time.
Brush grill racks with oil and place tenderloin on the grill (either in smoker or over charcoal). Sprinkle lightly with salt and grill turning once until brown and crusty (about 25-30 minutes). Let stand 10 minutes before slicing on the diagonal ˝ inch thick.

Serves 8-12
